Blueberry Bran Muffins
2 cups yogurt
2 tsp baking soda
1/2 cup unpacked brown sugar
2 eggs
1 cup canola oil
2 cups bran
1 cup whole wheat pastry flour
1 cup unbleached flour
4 tsp baking powder
1 tsp salt
1 cup blueberries
Measure yogurt and baking soda into a bowl and mix, set aside. In a large bowl beat sugar, oil and eggs. Add bran and mix. Mix flour, baking powder, and salt then slowly add to the bran mixture alternating with yogurt. Fold in blueberries. Bake at 400 for 20 minutes turning once.

Peanut Butter Cookies
1 cup Peanut Butter
1 egg
1 cup sugar
Mix and place 1 inch balls of dough onto a cookie sheet. Use a fork to flatten with a hatch pattern, then bake at 350 degrees for about 10 minutes (just a bit of browning at the edges). Let cool, as they will fall apart when warm.
