Snow, hail, and food!

 We had a thunderstorm with hail Wednesday evening. Then it froze overnight and the hail still hasn't melted.

 And I'm really enjoying cooking and baking. Bacon cheeseburger pasta...
 What to do with extra bananas and pears? Make banana pear bread, of course!

Banana Pear Bread
2 cups mashed bananas/pears
3 cups flour
3 tsp. baking powder
1/2 tsp. baking soda
4 eggs
1 1/2 cups sugar
1/2 cups cooking oil
2 Tbsp. vanilla extract
2 tsp. cinnamon
 
Preheat oven to 350 degrees.  Grease 2 loaf pans. In a large bowl, mix together eggs, bananas, sugar, cooking oil and vanilla. Beat until well mixed. In another bowl, mix flour, baking powder, baking soda, cinnamon, and a bit of salt. Add the egg mixture to the flour mixture and stir with a spatula until it’s well moistened but not too well mixed. Spoon batter into the loaf pans, filling about 2/3 of the way full. Bake for 40-50 minutes, or until a toothpick inserted in the center comes out clean. Let cool in the pan for 10 minutes, then transfer to a wire rack to cool. Enjoy!
